Pepper Jelly
Since we had to pick all of our peppers on account of the snow and were left with an entire bucket of Jalapeno's we decided to make out pepper jelly a little earlier than planned. None of our multi-colored Bell peppers had changed to any color besides green and our habenero's hadn't ripened so we had to make a trip to the store to spruce up the jelly color. Two batches later we had burning hands, and an eye in Eric's case, but we yielded about ten jars of jelly. We hope to make another batch soon because three batches in one day was just too much to take on. Here is the recipe. It recommends one packet of sure-jell but I think I might put two next time because it didn't come out as thick as I'd like. By the way, we borrowed a friend's kitchen. I may have to retire the garage kitchen now that it is friggin' cold here.
