Pepper Jelly
Since we had to pick all of our peppers on account of the snow and were left with an entire bucket of Jalapeno's we decided to make out pepper jelly a little earlier than planned. None of our multi-colored Bell peppers had changed to any color besides green and our habenero's hadn't ripened so we had to make a trip to the store to spruce up the jelly color. Two batches later we had burning hands, and an eye in Eric's case, but we yielded about ten jars of jelly. We hope to make another batch soon because three batches in one day was just too much to take on. Here is the recipe. It recommends one packet of sure-jell but I think I might put two next time because it didn't come out as thick as I'd like. By the way, we borrowed a friend's kitchen. I may have to retire the garage kitchen now that it is friggin' cold here.

Hundreds of Beans, and Ghost Chiles.

ghost chilesHave you ever wondered if you can can in your garage on a camp stove? Yes, you CAN! We picked out hundreds of beans and we probably have another round out there ready to go. We set up our makeshift canning station in the garage and away we went. Eric bought ghost chiles so that in six weeks he can punish his body and likely our toilet when he opens the deadly dillies and check's out what his spice tolerance level really is. We made a plain jar, a jalapeno jar, and a crushed red jar too. Just another old lady hobby to add to the list.
